- 1 cup hot water
- 1 tsp vanilla essence
- 3 tsp cocoa
- Mix the above and put to one side
- 1 cup flour
- 1 cup castor sugar
- salt
- 4 tsp baking powder
- Beat 2 eggs and add to cocoa mix
- Add a quarter cup of oil
- Method:
- Combine wet and dry ingredients
- Pour into pyrex dish which has been lined with a piece of carlton paper
- Cook on high for 7 – 7.5 minutes
- Leave to stand for 10 – 15 minutes in the microwave
- (works best in a ‘ring’ mould)
